HOT OIL SCISSOR-CUT NOODLES

Dāoxiāomiàn, or sliced noodles, are a humble hand-cut noodle variant, but not how you think (and possibly not how you’re used to). To me, a hand-cut noodle is one that is a bit rustic and doesn’t use a machine, whereas these noodles are shaved from a block of dough, using a knife, into a pot of boiling water, producing wide strips of noodles. To be on the safe side, I find a pair of scissors makes a great and much safer alternative to a knife—and to the same effect—so that’s what I’ve done for my version of dāoxiāomiàn.
